Kutia is a Mediterranean festive recipe made from grain. It is made from boiled grains and optimally mixed with spices. Kutia, also spelled, Kutiya, is a community food shared with others during religious and cultural rituals.

INGREDIENTS

The cooked wheat berries should be added to a blender container along with 1/2 cup raisins, 1/3 glass chopped dry apricots, 1/8 tsp salt, powdered poppy seeds, and the honey-milk mixture. Combine all ingredients in a casserole or pie dish, then bake, uncovered, at 325˚F for 20 minutes.
SERVING
It can be served warm or cold, and topped with cinnamon.

The most popular grain used to produce kutia is wheat berries. There are variations of this meal cooked with barley or rice, depending on the area.Remember that wheat berries require at least 12 hours of soaking time and take the longest to cook. Because they cook in less than ten minutes, Whole Foods and Organic Kamut Khorasan Wheat are great options. Additionally, they are packaged tiny, saving you money by not purchasing an enormous bag of wheat berries. Any other brand of Kamut berries will work, however cooking time may increase.
