Quick Black Bean & Chicken Lunch Wraps
A protein-packed, no-cook wrap that travels well and stays fresh until lunch.
Ingredients:
- 6 small whole-wheat tortillas (8-inch)
- 2 cups shredded rotisserie chicken
- 15 ounces of rinsed and drained black beans from a can
- 1 cup corn kernels (canned, frozen thawed, or roasted from a bag)
- 1 cup shredded Monterey Jack or cheddar cheese
- ½ cup prepared salsa (mild or medium)
- 1 tablespoon lime juice
- ½ teaspoon cumin
- ¼ teaspoon garlic powder
- Optional: sliced avocado, chopped cilantro, sour cream for serving
Steps:
Combine the filling. In a large bowl, mix the shredded chicken, black beans, corn, cheese, salsa, lime juice, cumin, and garlic powder until well blended.
Warm tortillas (if desired). Briefly heat each tortilla in a dry skillet over medium heat for 10–15 seconds per side, just until pliable. This prevents tearing. Let cool slightly.
Put the wraps together. What about a spoon Spoon a cup of the chicken mixture onto each tortilla’s center. To create a cylinder, fold the sides inward and roll tightly from one end.
Wrap for transport. Wrap each burrito tightly in parchment paper or foil. Place seam-side down in a lunch container.

Pack and relax. Lunches should be packed and placed in a cooler bag with ice packs. For optimal freshness, serve within 4 hours.
